Cooking instructions

To soak overnight Rinse and cover with water in a non-metal container. Leave to stand for 12 hours.

Quick soak Cover black-eye beans with water (about 2cm above the beans), microwave for 3 minutes on high and leave to stand for 30 minutes. Cook as described below.

Cooking method Rinse well, cover with generous amount of water and simmer gently for 1 ½ hours until done

Cooking tip Only mix in salt and vegetables when the beans begin to soften

Truefood Sugar beans are NON-GMO and have a high soluble fibre content which absorbs water in the stomach forming a gel that slows down the absorption of the beans carbohydrates. Also referred to as red speckled beans they are a source of protein and make a great addition to vegan and vegetarian diets.

Sugar beans are red speckled beans with a mild flavor that are usually added to curries, stews and casseroles.
